Total Time

25 minutes, plus approximately 2 hours chilling time.

Yield

36 bite-sized squares.

Ingredients

  • 3 cups dark chocolate chips
  • 1 (14-ounce) can sweetened condensed milk
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional, but highly recommended to enhance the cherry flavor)
  • 1 (3-ounce) box cherry gelatin powder
  • 2 tablespoons heavy cream or whole milk
  • Red food coloring (optional for a more dramatic blood-red swirl)
  • ½ cup chopped candied cherries
  • Extra whole candied cherries for garnish
  • Dark chocolate shavings or black sanding sugar for decoration (optional)

Instructions

Prepare an 8-inch square baking pan by lining it with parchment paper, allowing enough overhang on the sides for easy removal after chilling.

In a medium saucepan over low heat, combine the dark chocolate chips, sweetened condensed milk, and butter. Stir constantly until the chocolate has completely melted and the mixture becomes smooth, glossy, and free of lumps. Remove the pan from the heat and stir in the vanilla extract along with the almond extract if using.

Transfer approximately one-third of the chocolate mixture into a separate bowl. Add the cherry gelatin powder and heavy cream, stirring until fully dissolved and smooth. If you want an even deeper crimson color, mix in one or two drops of red food coloring.

Pour the plain chocolate mixture into the prepared pan and spread it evenly with a spatula. Spoon the cherry mixture over the chocolate in several lines or dollops. Using a butter knife or wooden skewer, gently swirl the two mixtures together to create dramatic blood-like patterns. Avoid overmixing so the swirls remain distinct.

Sprinkle the chopped candied cherries evenly across the top, gently pressing them into the fudge. Decorate with whole candied cherries, chocolate shavings, or black sanding sugar if desired to give the dessert an even more dramatic Halloween appearance.

Refrigerate the fudge for at least two hours, or until completely firm. Once chilled, lift the fudge out of the pan using the parchment paper and cut it into 36 even squares using a sharp knife. For the cleanest cuts, wipe the knife clean between slices.
